Red Curry Beef Simple Recipe

Beef is the most exciting food item all over the world. Thus there are a large number of beef recipes available and are applied in different ways. Red Curry Beef is one of the most delicious beef dishes.

Red curry beef is basically a Thai recipe and simple to prepare. Even you can make the curry with beef or lamb. The curry is tasty and healthy because the sauce is made from scratch. Ingredients:
To make the curry sauce you need:
Finely sliced lemongrass 1 stalk, or 2-3 tablespoons of frozen prepared lemongrass,
Galangal 1 thumb-size piece or fresh sliced ginger,
Chopped shallot 1 piece, or chopped red onion ¼ cup,
Cloves garlic 5 pieces
Fish sauce 3 tablespoons,
Shrimp paste 2 tablespoons,
Ground coriander 1 tablespoon,
Ketchup 1 tablespoon or tomato paste 2 tablespoon and 1/2 tablespoon sugar (if ketchup is not available),
Ground cumin 1 tablespoon,
Chilli powder 2 tablespoon,
Fresh red chillies 1-2 pieces, minced, or cayenne pepper 1/2 to 1 tablespoon,
Lime juice 2 tablespoon,
Brown sugar 1 tablespoon,
Coconut milk 2-3 cans, you have to reserve the 1/3 for later use.
To make the curry you need:
Beef stakes from sirloin 2 pieces cut into thin strips (6 to 8 ounce each),
Bay leaves 3 pieces or kaffir lime leaves 3 pieces,
Cinnamon ½ tablespoon or cinnamon’s stick 1 piece,
1 cinnamon stick or 1/2 tsp. Cinnamon,
Cherry tomatoes 2 cups (or chopped regular tomatoes),
Small zucchini 1 piece and cut into spears,
Handful of chopped fresh coriander and basil
Preparation:
As the first step of red curry beef cooking, you have to make unison of all the ingredients in a food processor or blender. Process or blend until all the ingredients get well mixed. Then place a frying pan with little oil over the stove on medium-high heat. Swirl the oil to coat the pan and then add the prepared curry sauce, lime leaves, beef, cinnamon stick, and ½ of the tomatoes. Stir the mixture well to mix all the ingredients each other.
Boil the curry gently. Add some water on the pot if the curry becomes thick. Wait for 8-10 minutes until all the ingredients get boiled properly. You can stir the curry after a regular interval to prevent from sticking with the pan. Decrease the heat now to medium-low to make the curry simmering. Cover the pot properly for around 10 minutes.
After the curry gets boiled, add the zucchini and remaining tomatoes or remaining any other vegetables. Stir them all and continue simmering for more 5 minutes to soften the zucchini or tender the meat. Add the remaining 1/3 of the coconut oil and reduce the heat to low. Continue stirring. You can add a little fish sauce if the curry is not tasty enough. If you are fond of sweet, you may add sugar. People who love spice can add more chillies to make it spicier.
Garnish the curry with the fresh coriander and basil. Serve the curry with steamed rice.
